Had a lovely day today at Royal Victoria Country Park, Hamble near Southampton. Seven of the family got together and drove down. Jenny my eldest niece has just passed her driving test,
and has turned out to be a very good driver. Direction and guidance came from her husband Paul in the back seat!!!!
The park looks out on to the Solent. There were a lot of yachts, ships etc on the Solent today. Cowes week starts today. We had great entertainment watching two windsurfers trying to stay upright.
I took off for a while to do a walk. Leg is getting better but just a bit sensitive. I managed a 2 1/2 mile walk around the park grounds which are gorgeous.
Getting to grips with the Ball (literally). I position myself between the two sofas with several cushions surrounding for safety's sake!! Really want to crack this balance exercise. I read that after 40 balance naturally deteriorates so it's time to catch some quick!!! Tried to remember the exercises we do in the gym. The Ball is quite good just to sit on watching tv cos you are always trying to keep balance unless you lose concentration then you come into close contact with a sofa!!

Mixed mushroom ragout
1 small onion, finely chopped
1 garlic clove, crushed
5 ml/1 tsp coriander seeds, crushed
30 m1/2 tbsp red wine vinegar
15 ml/1 tbsp soy sauce
15 ml/1 tbsp dry sherry
10 m1/2 tsp tomato puree
10 m1/2 tsp soft light brown sugar
150 m1/ ¼ pint vegetable stock
115 g/4oz baby button mushrooms
115 g/4oz chestnut mushrooms, quartered
115 g/4oz oyster mushrooms, sliced
salt and black pepper
coriander sprig, to garnish
freshly ground black pepper
Put the first nine ingredients into a large saucepan. Bring to the boil and reduce the heat. Cover and simmer for 5 minutes.
Uncover the saucepan and simmer for 5 more minutes, or until the liquid has reduced by half.
Add the baby button and chestnut mushrooms and simmer for 3 minutes. Stir in the oyster mushrooms and cook for a further 2 minutes.
Remove the mushrooms from the pan with a slotted spoon and transfer them to a serving dish. Keep warm. if serving hot.
Boil the juices for about 5 minutes, or until reduced to about 75ml/5 tbsp. season to taste.
Allow to cool for 2-3 minutes, then pour over the mushrooms. Serve hot or well chilled, garnished with a sprig of coriander.
